We have been eating some yummy Mexican food lately. Like tacos.
Easy to make:
Chopped romaine and onion, black beans, sour cream, taco shells and tofu seasoned with lemon and TJ’s Taco Seasoning.
If you have a bit more time (mostly just to chop things), I would suggest Angela’s Vegan Enchiladas. They are yummy and will make your kitchen smell so amazing. Trust me. I have a super strong sense of smell. I can smell things from incredibly far away- a blessing (pretty-smelling flowers!) and a curse (riding the bus with people who reek of drugs and alcohol). These enchiladas made thankful for my sense of smell.
Right as I was about to place this in the oven (to be honest, I’m not sure why since everything was already cooked but I wanted to be a good girl and follow the recipe…not very green unfortunately) Severin ran into the kitchen, shouted “hey, I’m not vegan!” and threw a pocketful of cheddar onto part of the dish. He also added sour cream to the finished product when I wasn’t looking…I’m joking- he didn’t really have to be sneaky about the dairy, I don’t really care either way. The guy grew up vegan (!!!) and can eat whatever he wants, fortunately for both of us he is very agreeable and goes with what I want most of the time muahaha!

I also based my guacamole on her sauce, minus the cilantro, since I am not a fan. Since I’m making such declarations, I may as well admit I am not a fan of bell pepper either which is why I was reluctant to eat this but it was pretty good despite that! Severin LOVED it. He definitely cleaned his plate, then mine, then another! He was so stuffed but we couldn’t just sit around! We had a farmer’s market to get to. It took a minute to walk there, half a minute to look around and 3 minutes to pay for some strawberries since the woman helping us did not speak English or wasn’t in the mood to speak, I’m still not sure.

Any guesses as to what that is? If you guessed something you might find in a kitty litter box, you may be right. When Severin got home he threw a plain brown bag bag at me, with this in it. Um, why on Earth did I eat it without questioning him?! It seems very suspicious now. I’m hoping that what it really is, is an overpriced raw vegan truffle from Café Gratitude. I took a bite and realized it likely had some combination of dark chocolate, cacao and carob in it as it was very bitter (which I like!). Almost salty (interesting, interesting). I ate it in some vanilla almond milk, which balanced it out perfectly. I wish Café Gratitude posted the ingredients online- I’m so curious as to what is in this, especially since I hope it’s not cat poop think I read they use no sugar in their restaurant.

CONGRATS to my dad! Can I hear a whoo-hoo for him? He ran 3 miles in 28 minutes!! Awesome, right?! And his running buddy, my uncle, is building up so much mileage training for a 50K Ultra-Marathon, that he is a Nike tester- he gets to test Nike shoes and clothes. Aren’t they so kick-butt?! I wish I were that cool! But I’m not…
I actually went running yesterday for the first time in like a week or so but it was not great. I think a combination of the heat(not being used to it, thanks a lot NorCal weather!)+too much water/not enough food is why I felt pretty weak and faint! I just wanted to get some calories in quickly, so when we got home we ordered a mushroom pizza and a Pepsi. I bet you all are cringing! Does it help if I say I ate it with a ton of steamed broccoli? Because I did!
Maybe my problem was that I had been lacking protein- hadn’t had beans/rice or tofu or many nuts all week- no idea or reason why. So I had an early bedtime last night so I could wake up at 6am and 30 Day Shred with Jillian before a day of school and work, to start the day on a positive note. It was AWESOME! I don’t think I’ve shared this but I recently bought the DVD finally, figuring parting with 10bucks would be well worth it. It definitely was! I love the morning time and working out with the golden sunrise illuminating the living room made all those pushups and jumps feel so magical was really fun. I did feel a bit icky at some points though because at that time it was already (or still?) hot and so I did a ton of sweating! And while I showered, Severin was super nice and made me a shake: Amazing Grass, choc syrup, almond milk and frozen banana. This was HEAVEN! I can’t wait to have it again tomorrow, maybe with some peanut butter too.
A part of me feels hungry all the time; do you or is it just me?! I don’t want to give veg*ns a bad rep so I will take the blame and admit that some of the time that I feel hungry I simply don’t feel like eating/nothing sounds appealing. I just realized that since I love drinking water so much, I should probably just try to take in more via shakes, smoothies? ALSO, I know my body digests food very quickly (seriously- it’s crazy) and it can be hard to keep up! I think I’m just a little bit crazy too…![]()

I am hungry pretty much all the time too! I drink a lot of smoothies and eats lots of spoonfuls of nut butter to add extra calories/fat between main meals. I also keep a container of trail mix in my office to snack on throughout the day.

I’m hungry all the time too. Nuts or nut butter are the only thing that keep me full for at least a little bit of time!

I love me some enchi’s and tacos! I’ve actually never made vegetarian tacos. That needs to change ASAP.
