I feel like I haven’t posted in forever! I mean to, especially since I’m been making food and eating it; doing frugal things; being a hippie; working out: all things I said I’d talk about on my blog! But doing all that does not leave me with much time to spare unless I decide to do less of these two things: work and school. Hmm, that’s not really an option (I wish!) so I gotta just suck it up and post when I can.
I have been eating lots of yummy food! Before you see what I’ve been eating, I wanted to mention that sometimes no matter how hard you try to prep your meals so you can eat healthfully and frugally, you may find yourself dipping Little Cesar’s breadsticks into a cup of marinara one night when you’re cold, tired and waiting for the bus. I certainly don’t find myself pining after food such as that during the day, but in those conditions and after a 3 hour class, nothing sounds better than hot food fast. Those breadsticks wouldn’t taste amazing now but they did then!
Enough of that, let’s cleanse your palate with some recent eats!
Alskling made this lunch which he deemed to be very Swedish.

Swedish rye bread/cracker w butter, steamed broccoli, zucchini and mushroom, black bean burger, tomato
He was born and raised there so I trust him on these things. However, I did not exactly trust him on this meal. For one thing, I love the KNÄCKEBRÖD plain and thought butter was unnecessary. Sometimes it is, sometimes it’s not! Same thought occurred when I saw the sour cream. And this thought just came to me right now- if Alskling was rasied vegan, what the hey is with all this dairy?! Weird. I guess he’s trying to rewrite his childhood!
After a Friday evening run, we got home famished and made the quickest thing we could: pita pizzas! I loved that we were able to use up leftover sauce I had made from tomato, onion, garlic!

I thought a dessert would be nice after this. I wanted something kinda rich. Not the typical desserts of oatmeal and banana I make that can pass for breakfast! Something sweet and chocolatey was what I had in mind, so I made a basic bronie recipe. I used butter and eggs, forgoing my usual substitutes of mashed banana and flax egg, because sometimes you just need some wholesome butter and egg brownies.
It looked beautiful.
I poured the batter into a muffin tray. Alskling and I had 2 each wih some milk. So good! Too good, actually. The next day they were taunting me. Just sitting there, looking reaaaally inviting. So I had one. Alskling did too. Then I thought about having another. Alskling didn’t want to put up with the torture of me looking longingly at them so he decided we would just demolish the few that were left.
That may not have been the worst idea in the world. That came shortly afterwards. When I decided it was time to go out for a run. THAT was the worst idea. I started out on the run feeling alright, not great though. Any sane person would have turned back at this point. Alskling and I then began doing laps, aiming for around 6 to make about 3 miles. Lap 3 I felt immense discomfort but kept going. The laps following were worse. I hate hate hate not finishing something that I start, so I kept going. That is until I was nearly positive my insides were soon going to be splattered all over the elementary school we were running around. I finally told Alskling I was in need of a bathroom ASAP. He suggested we walk home. I struggled to walk. As I was taking a break from attempting to walk home with my let’s-eat-an-indulgent-dessert-then-run-induced stomachache, I realized there was a gas station in sight where I could use the bathroom. Hallejuah! Happy ending to the story. And lesson learned.
But that’s no proper note to end on!

Sunday morning brunch was
I don’t usually like such ‘heavy’ breakfasts but I guess since it was late by the time we ate, my stomach had no problemo with it. In fact, I randomly challenged myself to 7 miles to redeem myself for that last awful run and it was awesome. I think waiting a few hours after eating helped!
After Alskling worked out and I ran, a super quick lunch was necessary. It was grocery shopping day but we managed to scramble together sandwiches!
Phew! Almost all caught up! Monday night’s dinner was onion, red potato, crumbled tofu seasoned w TJ’s spice mix in corn tortillas. Inspiration was grab anything and throw it in the oven. Happily, it worked out. Sadly, we scarfed that down too fast for pics. I did photograph the appetizers though!

And last night, I made a deconstructed taco. You may know it better as a “salad”.
Don’t tell anyone but I threw the veggies and fake meat in the oven and then went for a run! But I’m no arsonist, it was only a few miles and the oven was at like 250 degrees. As much as I’d like to get rid of my housemate (not Alskling, someone else), that would not be the way to do it. You think I’d put innocent vegetables at risk??






High-five to anyone who spots the veggie that snuck into every meal pic, in some form or another. The weird part: I’m not really a fan of this veggie!

Oops, just realized it’s a fruit: tomato, lol. and thanks. If only I had enough broccoli for everyone!
Strawberry lemonade oh yum. And the first lunch plate, looks right up my alley!
That guac and chips photo looks amazing – especially with the lemonade! Yum. Also, I always put stuff on to cook, and then go for a run/walk. A few times a week – aint no shame.
